Zucchini Pineapple Bread


Ingredients:
1 cup flour
1 tsp baking soda
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp nutmeg
1/2 tsp of ground cinnamon
1/2 tsp allspice
1 egg
2/3 cup sugar
1 tsp vanilla extract
1/3 cup crushed pineapple, well drained
1 1/2 cups shredded zucchini
1/2 cup walnuts, chopped
1/2 cup raisins (optional)

Directions:
Preheat oven to 350*.  Spray a loaf pan with cooking spray.  Combine all the ingredients (except for nuts and raisins) and mix well.  Stir in raisins and nuts.  Pour into baking pan and bake for 60 minutes or until knife inserted comes out clean.  Makes one loaf.

Now this sounds fabulous! I love anything with pineapple, and I was actually able to grow a couple this year.
